Blue Crab Omelet Stuffed Medallions




This is the Nappychef's take on a classic breakfast meal.  Bell peppers make the perfect container for many dishes, including the omelet. 

Ingredients.

Bell Peppers (red, green, yellow or orange)
Blue Crab meat :  lump or claw
Eggs
portabello mushrooms
onions
salt
pepper
scotch bonnet peppers

Carefully slice the peppers to make rings that are 1/2" to an 1" in height.

When pouring the eggs, do so slowly.
